Round bread with yeast and cheese

Required ingredients

First part:

  • 100g white flour
  • 50g active yeast
  • 100ml spring water

Second part:

  • 3 eggs
  • 100g yoghurt
  • 20g cow’s butter Destan
  • 300g white flour

For the filling:

  • cow’s cheese Destan

For the top:

  • 1 egg
  • raw sesame seeds

Method of preparation

Sift the white flour into a bowl.
Make a well in the middle and add the water and yeast.
Stir with a spoon and cover with cling film.
Leave the dough to rise. It should double its volume.

Then transfer the mixture to a planetary mixer and add the remaining ingredients from the second part.
Add the flour in parts, and add more if necessary.
The kneading should be long. Keep this in mind if you are going to knead by hand.
My mixer kneaded for about 15 minutes. The result was soft and pearly dough.
Transfer the dough to the kitchen counter and let it “rest” for half an hour.
After that, stretch the dough and leave it for another half an hour. Repeat this procedure three times.
Transfer the dough to a glass bowl and let it rise until its volume triples.

Divide the dough into two balls.
Roll each ball into a rectangular shape.
Sprinkle the dough with crumbled cow’s cheese and roll it up into a roll shape.
Cut the roll into pieces, at an angle.
Arrange the pieces in a baking tray with a diameters of 20 centimeters.
The above-listed ingredients make two loaves of round bread.

Place the loaves into plastic bags and let them rise until they have increased their volume 2-3 times.

Beat the egg and spread it on the round bread loaves by using a brush.
Sprinkle with raw sesame seeds.
Bake at the medium-height level in an oven preheated to 170 degrees, with the fan switched on, for about 45 minutes.
After baking, remove the round bread loaves from the oven and cover them with towels so that they can cool.
