Ziron burek with Labneh

Required ingredients

  • 2 packs of filo pastry
  • 1 cup of water
  • 1 cup of cooking oil
  • 6-7 glasses of warm water /broth may be used as well/

For the sauce:

  • 400g Labneh from goat’s milk “Destan” – with mint
  • 50g kajmak Destan
  • 3-4 cloves of garlic
  • 1 tablespoon butter
  • coarsely ground hot pepper and mint

Method of preparation

Spread the sheets of filo pastry. In a bowl, mix the water and oil and use a brush to grease the sheets of filo pastry, then cut them into two equal-sized parts, make them into a roll and cut them in half.

Place the resulting half-rolls in a pan, carefully arranging them without leaving any space between them. Bake at 200 degrees for about 30 minutes.

Pour the hot water over the baked rolls and continue to pour until the rolls absorb the water /for about 5 minutes/. In a bowl, beat the Labneh cheese and the kajmak, add the finely chopped garlic and pour the mixture over the rolls. In a pan, heat the oil and add the coarsely ground red pepper and mint.

Stir until the oil becomes aromatic with a reddish hue. Pour the oil over the entire surface of the rolls and the dish is ready to serve.
